Yes, Lake Tahoe and Yosemite National Park areas of excellent entertainment, but you may live long to explore all the rivers and waterfalls up and down Sierra and I enjoy doing just that. As a recommendation, go here: http://www.kennedymeadows.com/
Explore the surrounding Teton Valley, Idaho. The world-class fishing in the region, with beautiful mountains, near Teton and Yellowstone National Park.
You can also check beardmountainranch.com. It will come to let the horse and the earth in a number of different places.
Even if you do not want a guide, see www.backcountrysecrets.com. There are many funny things in the Teton Valley not on this page.
I want to avoid most popular national parks in the summer. I live near Yosemite, and this place is the way for more people. I would recommend the area of Cedar Grove in Kings Canyon National Park. There are a few waterfalls, a short walk from the parking lot of the street. You can fish in the River of Kings. There are many places along the river with no one around. Cedar Grove at several places to camp. All are first come, first served basis. Never been there, when the camps were full. You can also use this trick Boyden Cavern about 20 minutes drive from Cedar Grove campgrounds. It is a very interesting cave with strange formations.
Another area of the exit value of Control is the Sierra National Forest. Between Yosemite and Sequoia / Kings Canyon National Parks. Here is a link to this page:

There are many lakes where fishing in the Sierra National Forest and make a lot of places to relax. I personally recommend Lake Courtright Reservoir. No information about the lake on the link above. Hopethis helps.
I stayed inside and two rows of Lake Tahoe / Yosemite boxed, as are large, but very popular. I suggest you try to go a little out of season, if possible, avoid the crowds. I stayed at a luxury resort in Lake Tahoe, at a conference, and went wherever I could.
Yosemite Valley is a popular, but if you go away and there's a lot, I stayed outside the park because it is quieter. Many waterfalls in the valley streams, but many people when they try the summer break. I do not know fish, just went and camped. It looks like a better fit for what you want.
Enjoy!
I live in the Adirondacks and we have everything you need
The Bankhead National Forest, Double Springs, Alabama is located near the Sipsey Wilderness Area. It is 25,000 hectares large ways and places with numerous waterfalls and more. It is a popular place, but if you during the week there will be less likely to find others. I hear the Sipsey River is good for canoeing, rafting and swimming when the water level rises. This has been very dry here in Alabama so far this year, so not sure what it was.
Try to West Virginia!
